Roasted Acorn Squash

As cool weather approaches us we see more of the wonderful arrays of squashes in the grocery stores. They are full of beta-carotene and potassium, plus other nutrients too. So, enjoy some this season without feeling guilty. This roasted acorn receipe is simple yet tasty. You could add anything to it once it is done, but for the purpose of keeping it healthier, try to not go over board and only use good stuff, such as spices; and if you really like to dress it up, perhaps some good organic butter or olive oil. If you like it a bit sweeter, use natural maple syrup or agave syrup with sprinkles of cinnamon and or nutmeg. A delightful treat, as dinner, side dish or snack. Kids would love this too. Enjoy this vibarant squash.

Ingredients

  • As many acorn squash that you would like

Instructions

  1. Preheat oven to 350 degree. Take out a cookie sheet or like kind of pan to place the acorn/s on.
  2. Wash acorn/s and place on the cookie sheet. You could rub some olive oil on the acorn/s or just leave it as it is.
  3. Place the pan into the preheated oven and bake for about 40 minutes. Then at this point, it would be a good idea to turn it on its other side to allow that side to roast too; and check how far has it cooked. Give it another 20 minutes or so or until done when inserted with a sharp knife.
